Tandoori Chicken Wings

INgredients

  • 450g chicken wings (roughly 16 wings)
  • 1/3 cup plain yogurt or ⅓ cup plain Greek yoghurt
  • 100ml Vegetable Oil
  • 1 tbsp lemon juice, 1 lime
  • 1/2 tbsp minced ginger (1-inch piece)
  • 1/2 tbsp minced garlic (4 cloves)
  • 1/2 tbsp besan or cornflour
  • 1 tsp salt
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tbsp coriander powder
  • 1/2 tbsp Kashmiri red chili powder
  • 1 tsp paprika
  • 1/2 tsp chaat masala
  • Coriander leaves
  • Limes x 2
  • Red bird’s eye chillies x 3

method

  1. Preheat Oven to 200 degrees celsius
  2. In a large mixing bowl, combine the yoghurt, minced ginger, garlic, lime juice, salt and dry spices to create the marinade.
  3. Add the wings and toss till well coated.Cover and allow to marinate for up to 4 hours. 
  4. Line a baking tray with baking paper and place the wings on the tray and bake for 25-30 mins.
  5. Remove from the oven and brush the wing slightly with oil. Switch the oven to Grill. Grill for 1-2 minutes on each side, until the skin is crisp and golden. 
  6. Serve with a good squeeze of lime juice, coriander leaves, and sliced red chillies.
