Tandoori Chicken Wings

- 450g chicken wings (roughly 16 wings)
- 1/3 cup plain yogurt or ⅓ cup plain Greek yoghurt
- 100ml Vegetable Oil
- 1 tbsp lemon juice, 1 lime
- 1/2 tbsp minced ginger (1-inch piece)
- 1/2 tbsp minced garlic (4 cloves)
- 1/2 tbsp besan or cornflour
- 1 tsp salt
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tbsp coriander powder
- 1/2 tbsp Kashmiri red chili powder
- 1 tsp paprika
- 1/2 tsp chaat masala
- Coriander leaves
- Limes x 2
- Red bird’s eye chillies x 3
method
- Preheat Oven to 200 degrees celsius
- In a large mixing bowl, combine the yoghurt, minced ginger, garlic, lime juice, salt and dry spices to create the marinade.
- Add the wings and toss till well coated.Cover and allow to marinate for up to 4 hours.
- Line a baking tray with baking paper and place the wings on the tray and bake for 25-30 mins.
- Remove from the oven and brush the wing slightly with oil. Switch the oven to Grill. Grill for 1-2 minutes on each side, until the skin is crisp and golden.
- Serve with a good squeeze of lime juice, coriander leaves, and sliced red chillies.
